Ginseng does have a taste that you have to sort of get used to. Can't say I really like the taste but I have gotten used to it.
Older more mature roots have more zing to them taste wise too.
I go thru my wild root collection and keep several small roots that have 20+ years age to them. That is my preference. I like the hair roots best, next the main root, and least of all the root neck but I eat that part too.
You know that old saying - a spoon full of sugar helps the medicine go down !
If you put dry root chips or slices in with a hot cup of coffee or tea (and sweeten that), well it's not bad that way. I do that quite often but also just eat raw chips too. During the harvest season I get some fresh root too and that is excellent, but even dry chips once put in hot coffee or tea for a few minutes - become just like fresh.
