I have noticed that to Maya.
When you see them in the market place - stores like in China or China Town they are all processed, broke up and sorted by root part.
It looks like they break all the root necks off and keep those together for selling as root necks.
Then all of the the root hairs and small root branches are all broke off and kept together for selling together.
And eventually they get down to just the main bulby part of the root being left and those are all kept together and sold separately from the other parts.
Perhaps the Chinese folks get a kick out of breaking them up and sorting them in different batches. They want us to keep them whole so they can do that.
I expect it is just another way for them to market the goods, as some may prefer different parts of the roots, root hairs vs main root, etc.
Not sure - but you are right about that - those wild roots we take such care in digging - they do break them into pieces and sort for selling individual parts. At least a lot of it gets done like that - perhaps not all, but a lot does.
