I have tried muskrat and beaver too and can agree with you on that Chief - the are decent eating.
I have eaten several rattle snakes too.. the meat is very similar to frog legs, very white and clean looking, and texture much like frog legs.
When we were big into trapping... we could catch 40 or so coon over a weekend on the river (and lots of other critters)... we skinned all of those and there was a black guy from our home town that we could call and he would drive over in his big old car, and pop the trunk open and he would take all of those coons and toss them in the trunk of his car. I never asked him what he did with them, but I figured he had folks he was selling them to.
I was just glad to have someone take them and use them.
I have eaten coon and possum too... did not care much for coon but it may have been that I just needed to know the best way to cook it.

2.. Large Mouth bass filets, crappie, black perch, small mouth, etc
3.. A half grown squirrel, fried.
