Rattlesnake is not bad eatin if you want to try one out.
The meat is extremely white (like frog legs) and the texture is also a lot like frog legs.
They are easy to skin to - just slit right up the bottom from tail to head and the skin peels right off. Gut em - and then focus on the larger diameter parts (mid back area).
All you really have is a big long back/rib cage type structure.
Along the backbone on both sides you have two strips of meat (like the back stips on a deer). Then there is some thin meat down along the ribcage.
If you ever cook up the upper part of squirrel back it is similar in structure.
I have eaten several (in my younger days) deep fried like you would chicken or frog legs and well if you like frog legs you will probably do alright with rattler.
