If you worked up a bed out in the woods, or had a nice large planter outside (like half/whiske barrell) and collected your wild roots and planted them in there.
As long as it gets normal rain and temps and they are planted properly - they should be fine all winter.
If you did not dig em up and sell them they would sprout up in the spring.
It would be a good idea to put some 1/4 inch hardware cloth over the bed or planter to keep mice/moles/voles and other critters that might want to dig them up and eat them (out !).
When I started my seed producing bed last fall I just worked up a place out in the woods, made a nice raised bed and I collected wild roots and planted them in that bed.
This spring they sprouted right up.
You could do the same and work up a bed in the woods to temporarily store roots for selling on ebay.
When you plant them you would have to mark them good so you could locate them (with no top).
Just put a piece of wire in the ground or some marker - perhaps just above and just below the root so you know exactly where it is for digging up later.
